Description:
One of the many dishes we have cooked so far in class. First of all what is Cacciatore. Cacciatore means "hunter" in Italian. In cuisine, cacciatore refers to a meal prepared "hunter-style" with tomatoes, onions, mushrooms, herbs, often bell pepper, and sometimes wine. Cacciatore is popularly made with braised chicken or rabbit. In this case were using chicken not rabbits. This is a stew dish which can be eaten with rice, but personally i prefer with pasta noodles. It is also a very good stand alone dish. It is a very good dish for those who enjoy Italian food or tomato dishes. Hope you enjoy. :)

Ingredients:
½ c. Olive Oil
1 ½ c. Chicken, cut into serving pieces
5 clvs. Garlic, minced
1 pc. Onions, chopped
2 tbsp. Butter
1 tsp. Dried Basil or 3tbsp. Fresh Basil, chopped
2 tsp. Italian Seasoning or 1 tsp each marjoram and thyme
1 tsp. Oregano
1 pc. Chicken Bullion Cube
2 pcs. Bell Peppers, cubed
½ c. Red Wine
½ c. Tomato Sauce
12 pcs. Tomatoes, seeded & cubed
1 c. Water or Chicken Stock
1 c. Button Mushrooms, chopped
½ c. Pitted Black Olives
1 tsp. Salt
1 tsp. Sugar
¼ c. Parsley, chopped


Directions:
1. Heat ¼ c. of olive oil in a large casserole. Cook chicken until browned on all sides. Transfer chicken in platter, set aside.
2. Pour remaining olive oil into the same casserole. Sauté garlic then onions. Add butter and mix.
3. Return chicken into the casserole. Add basil, Italian seasoning, oregano and chicken bullion. Stir well.
4. Add in bell peppers and red wine. Simmer for 2 minutes.
5. Add in tomato sauce, fresh tomatoes and water. Cover and simmer for 10 minutes, stirring occasionally.
6. Add mushrooms and olives. Season with salt & sugar. Cook until chicken is fork-tender.
7. Stir in parsley and cook through.
